Editorial Review for La Chaya Bistro – by Molly Priesmeyer

In Short
This neighborhood Mediterranean and Mexican restaurant perfectly reflects its refined South Minneapolis surroundings: The owners have paid careful attention to turn this old KFC into a sleek bistro, decorating it with wood floors, mission-style furniture and black-and-white photographs that fit right in with the 1920s homes around the corner. Chef and co-owner Juan Juarez Garcia bakes, grills and flash fries with only the freshest ingredients available, all of them natural and most of them organically grown. Even the thin-crust pizzas, from Margherita to Mexican, celebrate the diverse Earth and its ingredients. The quaint restaurant might reflect the community spirit of South Minnie, but its global vibe-infusing Latin and Italian into unique and delicious dishes-sets it apart.
